General Manager stood the scoops so the handles were in an upright position and not touching the food products.
  • [42-03-5] Storage of maintenance equipment/tools in areas that may result in cross contamination of food, equipment, utensils, linens and/or single-service and single-use articles: observed a bucket with cleaning supplies sitting on a shelf over pan liners. General Manager moved the bucket to another area.
  • [08A-17-6] Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged: observed raw chicken on sheet pans on a speed rack over raw beef on a sheet pan over shrimp on sheet pans. General Manager rearranged everything for proper storage.
