  • [06-07-5] Time/temperature control for safety food thawed under hot running water. Observed : the chicken in the 3 compartment sink submerged in water, in a frozen condition, had water over 100° running on it. Hot water was turned off and cold water was added.
  • [21-04-4] In-use wet wiping cloth/towel used under cutting board. Observed : a damp cloth under the kitchen cutting board.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed : rice in the kitchen reach-in cooler at 45°. Operator said for morning prep she has been in and out of the cooler. Also, she had placed in the reach-in cooler a different pot of rice cooked today, that was now at 61°. Operator adjusted the thermostat from 3.5 to 3 to allow for a buffer.
  • [31B-04-4] No handwashing sign provided at a hand sink used by food employees. Observed : lack of a visible sign at the one hand wash sink. The sign was revealed, it had been covered.
