  • [31A-11-4] Handwash sink used for purposes other than handwashing. At front cook line, handwash sink used to fill up pitcher of water. Manager removed pitcher from sink.
  • [24-08-4] Equipment and utensils not properly air-dried - wet nesting. On clean dish rack, multiple plastic and metal pans stacked together before properly air drying.

Also, drain line holster closest to bar entrance not draining and soiled with white liquid.
  • [22-08-4] Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of top oven in back prep area soiled with black residue build up.
  • [25-05-4] Single-service articles improperly stored. In dry storage room, box of to go boxes stored on floor. Also, on expo under counter, two boxes of individually wrapped utensils stored on floor.
  • [08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. In walk-in cooler on speed rack, tray of raw shrimp on skewers stored above cooked ready to eat mushrooms. Manager moved tray of raw shrimp to bottom of speed rack.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At front cook line at salad station reach in cooler, pork and cheese stuffed mushrooms (51F - Cold Holding). Mushroom were placed in reach in cooler 1 hour prior but were stored in shallow pan inside another pan in top section of reach in cooler. Manager removed bottom pan so cold air can reach pan of mushrooms.
