[41-10-4] Toxic substance/chemical improperly stored. Several spray bottles containing glass cleaner stored on shelf below handwash sink at front counter, beside box containing single-use utensils. Manager removed the box of utensils from the shelf during this inspection.
[51-11-4] Carbon dioxide/helium tanks not adequately secured. One in-use co2 tank not secured at front counter. Manager chained the tank during this inspection.
[03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On stovetop at cookline: beans (110F - Hot Holding); pork (118F-130F - Hot Holding). Manager stated both items were heated in the oven and placed on the stovetop to be held hot at 9am. Inspector had manager reheat both items to 165F and continue to hold at 135F or above. beans (110F 10:40, 172F 11:05 - Reheating); pork (118F 10:40, 189F 11:05 - Reheating)
[21-07-4] Wiping cloth chlorine sanitizing solution not at proper minimum strength. Wiping cloth sanitizer chlorine 25ppm. Manager refilled the sanitizer bucket, then 50ppm.
[31A-11-4] Handwash sink used for purposes other than handwashing. 1. Employee filled a bowl with water at handwash sink in back of kitchen. 2. Employee rinsed thermometer in handwash sink at cookline.

[42-01-4] Wet mop not stored in a manner to allow the mop to dry. Wet mop stored down inside mop bucket in back of kitchen. Manager hung the mop to dry during this inspection.
[35B-02-4] Insect control device installed over food preparation area. Electric bug zapper stored on top of ice machine. Manager removed the bug zapper from the area during this inspection.
[33-26-4] Garbage storage area insufficient in capacity. Three trash cans overflowing behind building. Manager stated they are trying to obtain a dumpster.
[22-38-5] No sanitizer of any kind available for warewashing. Only use single-service items to serve food to customers until sanitizer is available for warewashing. Establishment has no sanitizer of any kind available in establishment. Manager stated they wash and rinse all dishes, but have not sanitized them since they are waiting to have a dish machine installed. Inspector reviewed proper warewashing procedures with manager, then manager went to the store and purchased sanitizer. Inspector set up the three-compartment sink with manager and instructed them to wash, rinse, and sanitize all dishes and food contact surfaces before use.
[31B-02-4] No handwash sign and/or paper towels/mechanical hand drying device provided at handwash sink. 1. No handwash sign or towels available at handwash sink beside ice machine. 2. No handwash sign available at handwash sink at front counter.
[13-06-4] Employee with artificial nails/nail polish working with exposed food without wearing intact gloves. Employee with painted and/or artificial nails scooped ice from ice machine without wearing gloves.

[08A-05-6] Raw animal food stored over/not properly separated from ready-to-eat food. Carton of raw shell eggs stored on shelf directly above bag containing fully-cooked liquid eggs. Manager moved the liquid eggs away during this inspection.
[03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On prep table at cookline: sliced cheese (46F - Cold Holding). Manager stated the cheese has been held on the prep table at room temperature for approximately 20 minutes and moved it to the walk-in cooler to cool to 41F.
[10-01-5] In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Handle of scoop stored down inside rice in bin in rear prep area.
