  • [21-07-4] Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed at front counter , sanitizer bucket reading 0 ppm quaternary. Operator remade solution to 200 ppm quaternary during the inspection.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed at salad station steam table - cooked chicken (116F - Hot Holding). Per operator chicken was held out of temperature for approximately 3 minutes. Operator reheated chicken to 167F during the inspection.
