At 2 hours 20 minutes wings were at 125F and rising.

  • [42-01-4] Wet mop not stored in a manner to allow the mop to dry. Observed wet mops stored on floor or in mop bucket not hung to dry by mop sink.
  • [08B-38-4] Food stored on floor. Observed case of chicken steak stored on floor in walk in cooler. Operator placed on shelf.
  • [22-43-4] Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Sanitizer level at 0 ppm for quaternary. Operator replaced empty bag with new one. Sanitizer level now reads 300 ppm.
  • [10-08-5] Ice scoop handle in contact with ice. Observed ice scoop handle in ice of ice bin. Operator stood up scoop removing handle from ice.
  • [13-07-4] Employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Observed one employee wearing a bracelet while plating French fries and another wearing a watch while cooking a cheesesteak on cooks line.
