Observed cut tomatoes with date marker of 12/24 on lid in walk-in cooler. Person in charge stated tomatoes were cut earlier in day and date marker had not been replaced. Person in charge added proper date markers.
  • [24-08-4] Equipment and utensils not properly air-dried - wet nesting. Observed clear plastic containers stacked on top of each other with visible signs of moisture and unable to air dry stored on drying rack across from three compartment sink.
  • [03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked chicken tenders and cooked chicken bites at temperatures of 111-125F in heating unit next to fryers.   • [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at 2 out of 3 handwash sinks in kitchen. Employee provided paper towels.
