Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. In walk in cooler, refried beans (54-56F - Cooling); rice and beans (58F - Cooling). Per employee both prepared on 2-1 and in unit overnight.
