  • [02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. One tray containing two wrapped portions of cooked chicken missing date marks inside walk-in cooler. Manager stated the chicken was cooked two days prior.
  • [14-01-5] Bowl or other container with no handle used to dispense food. Bowl without handle stored down inside bag of frozen okra inside reach-in freezer at cookline. An employee removed the bowl from the okra during this inspection.
  • [01B-28-5] Date marked combined ready-to-eat, time/temperature control for safety food not consumed/sold within 7 days of preparing/opening the earliest ready-to-eat time/temperature for safety ingredient. See stop sale. One container of cooked pork with date mark of 4/23 on shelf inside walk-in cooler.
