  • [22-50-4] Food-contact surfaces sanitized with a quaternary ammonium solution not exposed to the sanitizer solution for at least 30 seconds. Do not use equipment/utensils not properly sanitized. Employee washed and rinsed multiple utensils without sanitizing utensils for a minimum of 30 seconds using quaternary ammonium solution. Discussed with employee, employee rewashed, rinsed and sanitized utensils.
  • [03F-10-5] No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Time as a Public Health Control used for brisket sandwiches. Unable to locate paperwork. Log on cooler door not filled in. Person in charge filled in Time as a Public Health Control info for the brisket sandwiches that were prepared 20 minutes prior.
