  • [33-16-4] Open dumpster lid. Operator closed.
  • [22-08-4] Interior of oven has accumulation of grease/food debris.
  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Boneless wings (45F - Cold Holding) In reach in cooler across from the pizza oven. All other items in that unit were "in-temp," so operator moved boneless wings to walk in cooler to cool uncovered. Retemped at 41F.
  • [27-16-4] Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sinks on either side of pizza oven. Both temped 70F after running them for over a minute. Operator turned off hot water to 3 comp sink to try to get hot water back on at hand sinks. I washed my hands before leaving and got hot water, temped 90F.
