Observed in walkin refrigerator chicken at 9:44 with 4 hours to go (58F - Cooling at 9:59 58F) due to putting in plastic containers and then wrap in plastic and then stacking another container on top. Operator removed chicken placed on sheet pan uncovered to cool properly in walk-in refrigerator .
