- [02C-02-5] Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed cooked white rice and gizzards from Friday 5/3 (as per employee) without date marking in the reach in cooler . Person in charge dated the food.

- [12B-07-4] Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed bottle of water on the top of the prep table in the kitchen.
- [03G-50-1] Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed operator is conducting cook-chill ROP with turkey, lamb , beef ( brisket and pastrami ) and holding the food for more than 48 hrs without approved hazard plan.

Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Observed establishment added 3 smokers on the back side without submitting the application and get approval from the Division.
