Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In sushi fliptop lower cooler, diced raw tuna fully thawed still in vacuum packaging. Per employee thawed more than 4 hours.

Employee moved both back to stovetop to reheat for proper hot holding.
