Observed Nacatamales prepared on site with the old date label. Operator date marked them with the correct date.
[03B-01-6] Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed pork (110 F - Hot Holding)at the steam table, As per employee for less than 2 hours. Employee was advised to reheat food to 165°F.
