  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Near the handwash sink observed, raw shelled eggs (52F - Cold Holding). Operator stated eggs have been out for less than 30 minutes. Operator placed raw shelled eggs inside reach in cooler.
  • [12A-27-4] Employee cracked raw shell eggs and then handled ready-to-eat food and clean equipment or utensils without washing hands. Observed employee handle raw shelled eggs, then proceed to touch clean plates and place ready to eat "arepa" on plate. Discussed with operator that when handling raw eggs there must be a glove change and handwash afterwards if handling ready to eat foods and clean equipment. Employee discarded food.
