On prep table, sliced potatoes (106F - Cooling @ 30 minutes,86F @ 1.15 hours); green beans (131F - Cooling @ 30 minutes, 112F @ 1.15 hours). Products finished cooking and was placed on prep table to cool. According to cooling calculator products are improperly cooling. Operator put products in walk-in freezer to bring temperature down quickly.
