Inside reach-in cooler at kitchen entrance: sausage (62F - Cold Holding); meatballs (57F - Cold Holding). Manager stated he noticed the refrigerated make-table stopped working one hour prior and moved all of its contents into the working cooler and called a repairman to fix the unit. Inspector had the employee transfer the items into the freezer to rapidly cool to 41F.
[23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. 1. Top of oven soiled with dust. 2. Gaskets on door of freezer in upstairs storage room soiled with mold-like substance.
[14-74-7] Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Refrigerated make-table ambient temperature 50F. Manager had already moved the items to another cooler and have a repairman scheduled to fix it.
