In reach in cooler on cook line, raw chicken (46F - Cold Holding); milk/egg batter (47F - Cold Holding). Chicken and batter were brought from walk-in cooler approximately 1 hour prior but cooler was not turned on. Manager turned on unit.
[24-08-4] Equipment and utensils not properly air-dried - wet nesting. On clean dish rack near 3 compartment sink, plastic tubs stacked before properly air drying.
[33-15-4] Garbage can located outside has no lid or lid open/broken. Lids broken on both dumpster. Also, side doors of both dumpsters open. Manager shut side doors.
[29-42-4] Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Vacuum breaker missing at the end of the splitter for mop sink faucet where black hose is attached. Manager stated he will go purchase one today.
