Per operator item was cooked this morning at 6am, still has not reached 41°F at 6 hour mark, temperature taken at 12:07pm. Operator discarded. Also observed deep fried chicharron (120F - Hot Holding)in the hot holding in front counter, per operator it was placed in hot holding unit around 6am. Also observed butter (80F - left on counter for panini press since 6am).
