Ice bath on cook line: diced ham (54F - Cold Holding); pork sausage (53F - Cold Holding); cracked liquid eggs (47F - Cold Holding); raw shelled eggs (49F ambient - Cold Holding) for 2 hours per operator. On front counter: milk (50F - Cold Holding) per operator for three hours. Operator states milk on counter is discarded at three hour mark, and discarded the milk. corrected on site Counter next to flat top: butter (78F - Cold Holding) for one hour per operator. Provided operator time as a public health control form and discussed use. Operator began filling out form at time of inspection.
