  • [14-11-5] Equipment in poor repair. Dish machine not in use during inspection, ran machine, tested at 0ppm. Discussed with operator to get serviced. Had employee set up triple sink with approved bleach, tested at 100ppm.
  • [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Gaskets on upright two door cooler soiled with mold like substance. Hood vents soiled with build up of grease.
  • [31A-09-4] Handwash sink not accessible for employee use at all times. Rear hand wash sink blocked by wiping cloths. Have sink by fryers clocked by cart, trash can and being used as storage.
  • [31B-03-4] No soap provided at handwash sink. At either hand wash sinks in kitchen
  • [16-03-4] Accumulation of debris inside warewashing machine. Dish machine soiled with slime.
  • [22-20-5] Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Ice machine lip soiled with mold like substance.
  • [08B-38-4] Food stored on floor. Fryer oil stored on floor.
  • [22-48-5] Establishment using a sanitizer solution that does not meet the requirements specified in 40 CFR 180. Only use single-service items to serve food to customers until approved sanitizer is available for warewashing. Observed laundry bleach for their sanitizer on their dish machine. Dish machine not in use during inspection. Employee went to Publix and bought approved food contact surface sanitizer. Had employee set up triple sink, chlorine sanitizer testing at 100ppm.
  • [31B-02-4] No paper towels or mechanical hand drying device provided at handwash sink. At either hand wash sinks in kitchen.
