  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw beef at 45F in 4 drawer reach-in cooler. Operator stated they had been in and out of cooler. Operator placed ice on beef to rapidly bring down temperature. Temperature now at 40F.
