Observed cooked chicken on counter in kitchen at 106F. Employee stated items had been cooked 3 hours prior. It was determined that the chicken never cooled properly and needed to be reheated to 165F and the cooling process restarted. Employee reheated to 165F and corrected the issue.

[09-01-4] Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed bar tender handling raw celery for Bloody Mary drink bare handed. Corrected employee onsite to ensure food was not served after barehanded contact.

Observed establishments has added small outdoor bar with reach-in cooler, hand wash sink and 3 compartment sink. Establishment also has added new outdoor ice machine that does not have proper coverage.
