  • [03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Checked pizza sauce 47F, mozzarella shredded cheese 46F, chicken 46 F stored inside reach in cooler less than 4 hours recommend to quick chill the pizza sauce. Sliced tomatoes 48F , chicken 48F stored inside walk in cooler, and. reach in coolers are over stocked. Smaller amounts in the pan and not to cover with plastic wrap until product in proper temperature 41F
  • [12A-10-4] Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee used arm to wipe nose while wearing gloves, located on pizza make line, did not wash hands. Recommend training for all employees proper hand washing procedures.
  • [22-16-4] Reach-in cooler interior/shelves have accumulation of soil residues. Observed interior of reach in cooler has shredded mozzarella cheese on the pizza make table.
