Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishmachine testing at 0ppm Inspector noted sanitizer bucket empty. Person in charge replaced sanitizer and retested at 50ppm.

See stop sale. Butter chicken sauce made with cream cooling overnight per person in charge in walk in cooler at 46-47F. Item is stored in deep metal pan. Also, Fried onions made yesterday per person in charge at room temperature in kitchen at 74F. Recommend holding small amount on time.
