The operator stated the cooked turkey has been held for approximately 2 hours. The operator emptied half of the contents and stored in the lower portion of the reach in cooler. Observed liquid pasteurized egg (70F - Cold Holding) in the kitchen at the breading station. The operator stated the egg wash had been held for approximately 2.5 hours. The operator voluntarily discarded the pasteurized egg. The operator was emailed a time as public health control form.
  • [35A-02-7] Live, small flying insects found. Observed 1 fly landing on an open container of panko breading in the kitchen. The operator discarded the panko breading.
  • [29-34-4] Vacuum breaker missing at hose bibb or on fitting splitter added to hose bibb. Observed no vacuum breaker at the splitter added to the hose bibb outside across from the walk in freezer.
  • [10-01-5] In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Observed the scoop handle used for onion ring seasoning not stored above the food. The operator properly stored the scoop handle.
  • [31B-04-4] No handwashing signs provided at a hand sink used by food employees in the mens and womens restrooms.
