Manager adjusted the sanitizer lines and primed again, then 50ppm. Inspector instructed manager to resanitize all dishes that have been sanitized using the dish machine today.

Inside top of refrigerated make-table at cookline: ham (52F - Cold Holding); turkey (47F - Cold Holding). Both items are sitting above the safe load limit inside the top of the cooler. Manager stated both items have been held inside the cooler overnight and have not been removed today. Stop sales issued.
[01B-02-5] Stop Sale issued on time/temperature control for safety food due to temperature abuse. Inside top of refrigerated make-table at cookline: ham (52F - Cold Holding); turkey (47F - Cold Holding). Both items are sitting above the safe load limit inside the top of the cooler. Manager stated both items have been held inside the cooler overnight and have not been removed today.
[02C-03-5] Commercially processed ready-to-eat, time/temperature control for safety food opened and held more than 24 hours not properly date marked after opening. Pans containing commercially processed ham and turkey missing date mark in top of refrigerated make-table at cookline. Employee stated both packages were opened on 8/4.
[09-01-4] Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline handled a Cuban sandwich with bare hands, cutting it and placing it into a foam container. Inspector had employee place the sandwich back onto the grill. Sandwich reheated to 176F.
[14-01-5] Bowl or other container with no handle used to dispense food. Metal cup without handle stored down inside bin containing all purpose flour. Employee removed cup from bin during this inspection.

Employee phone sitting on corner of prep table in back of kitchen, above shelf containing single-use plastic containers. Employee removed phone from prep table during this inspection.

[12B-07-4] Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Two drink cups sitting on prep table beside container of clean utensils and cans of soda. Employee removed both drinks from top of table during this inspection.
