This was out earlier today for prep. The food pan was fully wrapped. The garlic was placed in an ice bath for quicker cooling and vented. The walk-in cooler had food in it below 38°.
  • [22-02-4] Food-contact surface soiled with food debris, mold-like substance or slime. Observed : the soda nozzles on the wait line are soiled. These were cleaned by the staff.
  • [12B-07-4] Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed : an employee drink stored on the wait line prep table. This was discarded. Corrected On-Site ALSO, employee drink rack, with a drink, stored over food service gloves, on the cook line/prep corner.
  • [21-44-1] Sanitizer bucket/sani wipes stored with food, equipment, utensils, linens, single-service, or single-use articles. Observed : pouch sani wipes stored on the wait line prep table. These were moved below. (250 ppm quaternary ammonia)
  • [31A-09-4] Handwash sink not accessible for employee use at all times. Observed : the hand wash sink on the back prep line was blocked by a rolling cart. The cart was moved.
