[03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shrimp thawing at 63° and triple sink. the shrimp is removed from triple sink and refrigerated.

[22-49-4] Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly.

[06-01-5] Time/temperature control for safety food thawed in an improper manner. Observed shrimp thawing in triple sink without a container or running water . Shrimp is directly in contact with sink , no clean container is being used to hold shrimp to thaw . No running water on shrimp , lobster , conch or butter sauce . I talked to the manager on duty about proper throwing he removed the shrimp from the triple sink and began to thaw the rest of the shrimp and other items and cold running water.
