[06-01-5] Time/temperature control for safety food thawed in an improper manner. Frozen fish thawing in three-compartment sink in standing water. Manager turned on cool water over the fish during this inspection.
[23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. 1. Top of ice machine soiled with green substance. 2. Gaskets on reach-in freezer at bar soiled with mold-like substance. Manager cleaned the gaskets during this inspection.
[03A-02-5] Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Inside reach-in cooler at cookline: shrimp (48F - Cold Holding). Manager stated the shrimp was thawed one hour prior. 2. Inside top of refrigerated make-table at cookline: ham (47F - Cold Holding). The ham is in a pan sitting on top of another pan, well above the safe load limit of the cooler. Manager stated the ham has been stored here for approximately 15 minutes and put it back into the cooler.
[41-21-4] Original container of toxic substance or chemical does not bear the manufacturers label. Condiment squirt bottle containing hand soap missing label at handwash sink in server station. Manager adde proper label during this inspection.
