- [10-20-4] In-use tongs stored on equipment door handle between uses. Tongs hanging from door handle at cookline. Manager removed tings from the area during this inspection.
- [23-03-4] Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Dish racks for dish machine heavily soiled with buildup of black substance.

Pan containing raw beef stored on shelf directly above package of vegetable dumplings inside reach-in cooler at cookline. Manager moved the dumplings away from the raw beef during this inspection. 2. Pan containing raw chicken stored on shelf above pan containing fully-cooked ribs inside walk-in cooler. Manager moved the cooked ribs away from the raw chicken during this inspection.
- [14-38-4] Food storage container/container lid cracked or broken. 1. Several cracked lids in-use inside reach-in cooler in sushi prep area. 2. Three cracked plastic pan lids on clean dish shelf in kitchen. Manager discarded the lids during this inspection.
- [14-15-4] Nonfood-grade containers used for food storage - direct contact with food. Cooked shrimp stored inside cardboard box without lining inside reach-in cooler at cookline. Manager had an employee transfer the shrimp to a plastic food-grade container during this inspection.
- [33-16-4] Open dumpster lid. Lid of dumpster left open.
- [33-19-4] Garbage on the ground and/or pad around dumpster. Trash on ground around and behind dumpster.
